White Chocolate Blondies with Dark Chocolate Chunks

I decided to make these with the idea to make just blondies. However, the entire concept of finding chunks of dark and white chocolate in a lovely cake got the better of me. So when J on Facebook requested for a chocolate dessert, I decided to indulge her.

This recipe was made with rice bran oil rather than with butter. I have realized that I prefer making brownies and blondies with oil rather than butter, and rice bran oil has always been a favorite with me while cooking, thanks to its high smoke point and low levels of saturated fatty acids. So here is my very simple recipe which makes an exceptionally tasty cake, smelling gently of white chocolate and vanilla. 
Melt 100 grams good quality white chocolate, chopped into small pieces, over either a double boiler or in the microwave over low power (in 20-30 second bursts, stirring after each burst). Whip it up with 3 eggs (at room temperature), adding them one after the other whisking constantly after each addition. Add 3 tablespoon plain yogurt, 3 tablespoon powdered sugar, 3 tablespoon honey (you can always omit honey and add 7 tablespoon powdered sugar, but I like honey! Its way more complex and tasty than plain old boring sugar) 1 teaspoon vanilla extract (or the seeds of one vanilla bean scraped and added) and 5 tablespoons of Rice Bran Oil to it, and whisk till everything is nicely combined. 
In another bowl, mix 130 grams of all-purpose flour (maida) with 1 teaspoon baking powder and a pinch of salt. From this, remove 2 tablespoons. Take 150 grams of white and dark chocolate chunks and mix it with the 2 tablespoons of flour-baking powder mixture. Combine the remaining flour with the wet ingredients, mix until just combined and then walk away for 3-4 minutes. Meanwhile, prepare an 7×7 inch baking pan by greasing it and dredging it. 
Add the chocolates tossed in flour to the blondie mixture and pour it in the prepared baking pan. Bake at 180 degree centigrade for 25-30 minutes, or until a pin or needle inserted in the thickest part of the brownie comes out either clean or with little crumbs attached to it. 
Remove and let cool for 10 minutes before attempting to remove it from the pan and cool it further on a wire rack. Drizzle the top with some honey (I used some wildflower honey I got from France, but knock yourself out here!). Cut into pieces and serve.
