Yesterday was Christmas, and I was frantic, cooking up for about 6 friends of mine, who decided to come to lunch. My menu was extensive and some of the recipes will be on this blog. However, before I proceed, let me tell you about the mulled wine I made which was a major hit.
Everyone drank it.
Mulled wine with aged Bandel Cheese, homemade strawberry preserves, rich Edam cheese and Chinese stir-fried chicken liver. |
And it was a cheater’s delight.
This is how I made it. Serves about 1-8 people depending on their willingness to get drunk.
Ingredients:
750 ml. port wine
180 ml. dark rum
200 ml. sugar syrup
375 ml. rum and coke ( I used a bottle of bacardi and cola)
1 teaspoon orange rind
Procedure:
Combine everything and let sit for 3 days at least before serving.
I served this with some smokey aged Bandel cheese I had procured from New Market the other day, some homemade strawberry preserves (I would like to call it a coulis), stir-fried chicken liver and Edam cheese. Went perfectly.
