And since I’m no grumpyscrooge, I am off to have fun! I leave you with this. It is easy, it is simple, it has only a few steps and I forgot to take pictures of any one of those steps. However, it is as simple as it sounds, and bakes like a dream. However, the pictures, unfortunately through a lot of my own greed and fault, are hideous. But!! IT IS EGG-FREE and not too sweet and the sugar and milk can always be substituted with honey and so.. here it is. My Burnt Chocolate Chip Cake!!!
First, prepare a 8″ round baking tin by wrapping it in butter or oil slick parchment or wax paper. Also, pre-heat an oven to 180 degrees centigrade for around 10 minutes before putting in your beautiful cake or the mojo will be gone.
Second, mix together 1 cup flour (I used whole wheat flour, or atta .. gives it a delectable nutty tinge) with 1 teaspoon baking powder and a pinch of salt. Add 2 teaspoon cocoa in it, just to round off the flavor.
Third, mix 1/2 cup plain yogurt with 1/2 cup sugar and 1/2 cup milk. Here you can also substitute the sugar and milk with honey 3/4th cup… whatever floats your boat. Add 1 teaspoon Vanilla and mix in the flour mixture slowly, bit by bit, while whisking to incorporate. WALK AWAY for 5 minutes.
Add to it 50 gms of coarsely chopped chocolate. mix thoroughly. Pour in the batter, spread evenly, and carefully, and then top with another 50 gms of chopped chocolate.
Put the damn thing inside the oven and forget about it for 15 minutes.After that, come and check. Use the toothpick test. If the insides come out gooey, you have some more to go… but check every 2-3 minutes as egg-free cakes have a nasty way of turning too hard virtually within seconds!!

Open, let cool, remove the parchment paper and cut into pieces. Or eat whatever is left after Baby Sister exit the kitchen.
