Kashmiri Aloor Dum: Let the Pujas Begin!

Kashmiri Aloor Dum or Kashmiri Alu Dum always remind me of Durga Pujas or a Bengali Wedding. Essentially, this dish contains no onion or garlic, and it would be safely consumed by my Grandmother, who is a widow and eats only sattvik food. The recipe was shared at 94.3 Radio One where I was on air from 3-4 on a Thursday live with RJ Arvind as part of the Puja Special food that we cooked up at his show Arvind’s Kitchen. This is my first contribution to the Puja Week. The other one I have already shared is the recipe for the Threebie Chocolate Caramels which is a crowd pleaser.

This recipe is as simple as it gets.

We start with a kilo of potatoes, about the size of golf balls. Make sure the potatoes are uniform size, that helps in cooking evenly. Bring them home, scrub them, immerse them in water, and cook them till they are fully cooked and soft. Remove, cool down, and peel the skin off. Let cool.

Heat 3 tablespoon vegetable oil over medium heat in a big heavy bottomed vessel, and add 1 stick of cinnamon (2 inches), 4 cardamoms, 4 cloves and 1/4th nutmeg piece, pounded lightly to bruise the whole masalas. Add 2 bay leaves and 1 tablespoon sugar. Let this cook for 20 seconds before adding 1 tablespoon grated ginger or ginger paste. Let the sugar caramelize slightly. At this point, you can also add a couple of green chillies if you are so inclined.

To this, add 1 tablespoon poppy seeds, pasted and 1 tablespoon cashew nuts, pasted. Stir to combine. Add 1 tablespoon coriander powder, 1 teaspoon turmeric powder (haldi), 1 teaspoon kashmiri chilli powder and stir to combine. Add 150 gm. plain yogurt beaten together with 2 teaspoon chickpea flour (besan) and 2 tablespoon water. Stir to combine the mixture, and reduce over high heat till the mixture starts to release a good bit of oil. This would take 4-6 minutes. Add the potatoes, 1 cup water, and cover.

Cook for 10 minutes over simmering heat, adjust salt and sugar, and serve with rotis, luchi, paratha, pulao, or plain rice!
