Chicken Rice – A Silence Sings Specialty

Every week, we pick a blogger and either recreate one of his/her/their dishes, or copy paste them. I have chosen the dish “Chicken Rice” (check out the original link and get wowed by the photos she has taken).
Kamalika Chakrabarty blogs from Silence Sings, a Kolkata based food blog, which contains a lovely plethora of food (click on the logo on the side to check out her blog!). You would love to not just see the food, but also the care with which she photographs them. She also provides tutorials about photography at times, and in some of her posts you would see the way she describes the camera lens and other details (most of which goes over my head, mind you!) about the photograph.
I met her for the first time at our first Kolkata Food Bloggers’ Meet, and she gave me a chocolate (which I promptly lost, so she gave me another). I later knew her birthday fell on the same as my best friend, who considered me to be the bane of his existence all through school. We used to constantly fight, and then make up, and then fight some more. It was a happy time, my school days, I tell you. 
K-di, as she is known to me, is a passionate baker too, and she makes cakes that look amazing. And, to top it off, she makes a wide range of funky jewelry (my weakness!!!) that you can purchase as well. She takes requests from customers every once in a while, so be alert! You would have to check out her FB page to gawk at the beauties she makes. 
She has an incredible kid, who I absolutely adore, and that six-year-old is better than me with a camera, trust me. When the two start talking about photography, and K-di tries to explain how to hold the camera at a certain angle to get the best shot, while K-di Junior staring at her mother in rapt fascination, its such an intimate, cozy, comfortable thing that makes me wish my mom had something similar, hobby wise, with me. 
Anyway, here is the recipe exactly as she put it. Since I did not deviate from it at all, I would rather let K-di do the talking here. I copied the recipe STRAIGHT FROM HER BLOG because I am lazy.  

Chicken Rice

Ingredients:
 (Yields 2 in moderation )
Basmati Rice – 1 cup
Boneless chicken (cut in to very small pieces) – 1 cup
Onion – 1 big (Sliced)
Garlic – 3-4 cloves
Tomato – 1 large (Chopped)
Whole Garam Masala – 1-2 (Cloves, Cardamom, Cinnamon)
Turmeric Powder – 1 tea spoon
Cumin Powder – 1 tea spoon
Coriander Powder – 1 tea spoon
Red Chilly Powder – 1/2 tea spoon
Salt and Sugar as per taste.
Oil – 2 table spoon

Method:

  1. Cook the rice with salt till its almost done. Strain the excess water out and reserve.
  2. Heat oil in a Deep bottom Pan or a Kadai. Add the Garam Masala. When it will start to splatter add 1/2 tea spoon of sugar when the sugar will get caramelized and  the whole Garlic cloves. Let it turn brown and then add the onion slices.  Keep the onion fry till it gets a brown colour and a nice fried smelling.
  3. Add the Tomato and fry till it starts to separate oil.
  4. Add the chicken and all the other ingredients . Mix altogether nicely and then cover with a lid and cook in a low flame till the Chicken are well cooked.
  5. Boneless chicken takes approximately 10-15 mnts. When the chicken was done add the rice and mix nicely. Please taste if salt or sugar is needed. When done serve hot with salad, yogurt or some curry. It tastes awesome with only yogurt.

Let me just say it was what the family ate last night. And no, even with me tripling the recipe for four people, we did not have enough. We are hungry hogs that way.
